Still Dry white Wine, PGI = Protected Geographical Indication CRETE, from Malvasia variety 100% from grapes produced in Daphnes at 300 m. altitude. Vineyard “Xerolia”. Soil limestone and production yield 800 kg / acre. Grape harvest at early of August. In vinification, pre-enzymatic cryo-extraction at 12 degrees is applied initially. Then the grape must comes into stainless steel tank for static decay. It is kneaded at 14-15 degrees and after the first transfusion is wetting with lees. Then follow the principles of classic white wine making.
