Harvest: End of August to beginning of September for Mavrodaphni. Second fortnight of August for Black Corinthian.
Aging: At least 12 months in oak barrels (225 liters)
Vinification method:According to the traditional way of fortified sweet wine. Separate vinification for each variety and cessation of alcoholic fermentation, with the addition of wine alcohol. Thus, the sweetness of the Mavrodafni wine is due exclusively to the sugars of the grapes, while its bouquet combines the aromas of the grapes with those of partial fermentation and aging.
