Still Dry Wine, PGI = Protected Geographical Indication CRETE, from varieties Syrah 60% and Kotsifali 40% from grapes produced in the Daphnes region and 350m altitude, vineyard “Xerolia”, “Agios Myronas”. Soil Calcium and production yield 350-400 kg / acre. Harvest early September .
The grapes crying at 14-15 degrees Celsius and then the pulp is left for 1 week for wetting. The temperature gradually increases, resulting in kneading in the winemaker at 22-23 degrees. Following a malolactic fermentation (secondary fermentation) that takes place in a tank. At this stage, wine is shuffled once a week for 2 months. Then they stay for 6 months in a barrel, 30% of which are new barrels, 40% in barrels a year, and the rest in barrels of 2-3 years. It is then fixed and filtered and bottled.
